Lemon Berry Oatmeal

Anyone remember dinosaur egg oatmeal? The oatmeal that had sugar “eggs” in it then after time the sugar would dissolve and it would form little dinosaurs? I remember eating that a few times when I was young and have loved oatmeal ever since!

I have moved on from dinosaur oatmeal to this lemon berry oatmeal which has a bit more nutrients in it. Oatmeal contains soluble fiber. Soluble fiber has been shown to do amazing things for our body such as lowering cholesterol and regulating blood sugar levels. I actually first made this in high school and now it’s my favorite oatmeal. The taste reminds me of lemon bread (yum) and turns out to be a pretty purple color from the berries! Its a great option for any meal of the day (I actually eat it for dinner a lot) because it is packed with tons of nutrients, fiber, healthy fats, and protein to keep us fuller for longer.

If you want additional protein try adding in a half scoop of unflavored or vanilla flavored protein powder mixed in :)

Lemon Berry Oatmeal

Ingredients:
- 1/2 cup old fashioned oats
- 1 C unsweetened almond milk or 1% milk
- 1/2 cup frozen berries (I used a mixed berry but you could also opt for just blueberries)
- Juice and zest of 1 lemon
- Cinnamon to taste
- 1 T slivered almonds
- 1/2 T of chia seeds
- Drizzle of peanut butter

Instruction for stovetop:

1) Place your oats, milk, frozen berries, lemon zest and juice, and cinnamon into a medium sauce pan. Cook over medium heat, stirring until all of the milk is absorbed and it looks thick (~5 minutes). 

2) Scoop your oatmeal in a bowl and top with chia seeds, almonds, and a drizzle of peanut butter. Enjoy! 

Instructions for microwave:

1) Place your oats, milk, frozen blueberries, and cinnamon into a microwavable safe bowl. Microwave for 2 ½ minutes but make sure it doesn’t overflow (this happens a lot) and be careful when taking it out of the microwave as the bowl will be very hot.

2) Stir in the lemon zest and juice. Top with chia seeds, almonds, and a drizzle of peanut butter. Enjoy! 

TIP: If you want it a bit sweeter try adding a drizzle of honey!
